Cheesy pasta and pancetta

Serves two


  • 100g of dischi volanti pasta (any other type will do)
  • 50g of cheddar cheese (use one of your choice)
  • 50g of pancetta (smoked or unsmoked)
  • a tablespoon of olive oil
  • 50g of chopped up mixed peppers
  • one chopped onion


  • boil the pasta for 15 minutes and drain
  • add cheese and ensure that it thoroughly melts into the pasta
  • heat olive oil for 30 secs then add pancetta and cook for 5 minutes
  • add chopped onion and mixed peppers
  • keep turning for another 5 minutes
  • place the cheesy pasta into a bowl and generously top up with the pancetta

so easy… now dig in! This my little boy’s favourite dish *hint hint for those with kids*
