Decadent chocolate fondant

Clearly my favourite dessert!

Serves four


  • 80g of caster sugar
  • 100g of butter
  • 100g of cooking chocolate (use any variety that you like)
  • one tablespoon of plain flour
  • three eggs
  • a teaspoon of icing sugar
  • four strawberries
  • a teaspoon of strawberry coulis


  1. grease four ramekins with butter then lightly dust with flour
  2. melt chocolate then mix with sugar, butter and flour
  3. blend in the eggs and whisk thoroughly
  4. pour into the ramekins then chill in the fridge for 30 minutes
  5. place ramekins in preheated oven (180C / gas 4 / 350F) for 7 minutes
  6. allow to rest and remove gently to serve on dessert plates (can be served in ramekins  too)
  7. dust off with icing sugar, add strawberries and coulis to garnish
