Simply grilled chicken

Portions for two people

Ingredients

  • four chicken breasts with skin
  • 2 teaspoons of all purpose spice
  • 1 teaspoon of black pepper
  • 1 teaspoon of white pepper
  • 1 teaspoon of dark soy sauce

Method

  • wash chicken breasts and place in an oven proof dish
  • add spices and soy sauce then marinate for an hour
  • cover with foil then fire up oven to 180C / 350F / Gas 4 for 45 minutes
  • occasionally turn the chicken ensuring that it cooks in its own juices (preserves the meat’s flavour)

Serve with a salad or my favourite … egg fried rice!
