Embellished oats porridge

Filling and quick to make


  • 30g of oats porridge
  • 50 mls of milk (any preferred type)
  • half a teaspoon of sugar
  • one teaspoon of peanut butter
  • two squares of dark chocolate (or any preferred type)
  • one banana
  • a handful of blueberries
  • a teaspoon of cinnamon


  1. place oats porridge in a bowl, add milk and sugar
  2. cook in microwave for 2 minutes
  3. blend porridge thoroughly then beautifully arrange bananas, peanut butter, blueberries and dark chocolate on top
  4. finish off with some cinnamon



Sumptuous lamb roast

A Sunday favourite!

Serves four


  • one leg of lamb
  • a teaspoon of black pepper
  • a teaspoon of white pepper
  • one lamb gravy cube
  • one swede
  • two carrots
  • two parsnips
  • a teaspoon of marple syrup
  • a teaspoon of dark soy sauce
  • one chopped onion


  1. heat up oven to 180C / 350F / Gas 4
  2. place leg of lamb in a roasting pan, season with the gravy cube, black and white pepper then drizzle soy sauce and toss chopped onions on top
  3. cover with foil and cook in oven for 60 mins (until lamb is tender and falls off bone or reduce time in oven depending on cooking preference)
  4. slice all other vegetables and place into a separate oven pan, drizzle with oil and syrup.  Cook in oven for 20 minutes

Goes well with egg fried rice, any other rice or simply on its own (roast lamb and vegetables)

Isitshwala with beef stew and greens

I am craving some comfort food so here goes…

Serves two


  • 100g  of white maize meal
  • 50mls  of boiled water
  • 50mls of cold water
  • 100g of beef (stewing type)
  • 100g of sliced greens or kale
  • one chopped onion
  • 100g of chopped tomatoes (can use blended tomatoes)
  • a clove of garlic
  • a pinch of chilli powder
  • a tablespoon of olive oil
  • a cube of maggi seasoning or any other beef cubes
  • a teaspoon of all purpose seasoning



  1. mix 50mls of cold water with 50g of maize meal
  2. slowly add boiled water and allow to simmer for 5 minutes
  3. add the other 50g of maize meal and gently simmer for 15 minutes (occassional turning over to prevent lumps)
  4. if isitshwala turns lumpy, start all over with fresh ingredients (unfortunately it is a delicate dish and cannot be salvaged if not done properly)

Beef stew

  1. boil beef for 30 minutes or until tender
  2. remove excess water (keep to one side), add oil, onions, spices and fry for a minute
  3. add chopped tomatoes and allow to stew for 10 minutes
  4. add back the beef jus
  5. add sliced greens and simmer for 5 minutes

Plate isitshwala and beef stew.. eat up.  Best enjoyed without cutlery (finger food)


Cheesy pasta and pancetta

Serves two


  • 100g of dischi volanti pasta (any other type will do)
  • 50g of cheddar cheese (use one of your choice)
  • 50g of pancetta (smoked or unsmoked)
  • a tablespoon of olive oil
  • 50g of chopped up mixed peppers
  • one chopped onion


  • boil the pasta for 15 minutes and drain
  • add cheese and ensure that it thoroughly melts into the pasta
  • heat olive oil for 30 secs then add pancetta and cook for 5 minutes
  • add chopped onion and mixed peppers
  • keep turning for another 5 minutes
  • place the cheesy pasta into a bowl and generously top up with the pancetta

so easy… now dig in! This my little boy’s favourite dish *hint hint for those with kids*


Pretty Breakfast

Another quick and easy one


  • two strawberries
  • 50g of granola
  • 50g of natural yoghurt
  • six grapes (white and red)
  • a teaspoon of cinnamon
  • one banana


  1. Use cookie cutters to create pretty shapes (such as the banana hearts in this picture)
  2. Cut fruit into pieces (shapes and sizes to suit)
  3. Pour granola into a bowl and layer with natural yoghurt
  4. Add fruit (arrange to form a pretty pattern)
  5. Finish off by dusting with a teaspoon of cinnamon



Beautiful granola

A quick and easy breakfast


  • 50g of granola
  • 50g natural yoghurt
  • one banana
  • two strawberries
  • a handful of blueberries
  • a teaspoon of honey


  1. Cut fruit into pieces (any desired size)
  2. Pour granola in a bowl
  3. Add natural yoghurt and layer with fruit
  4. Drizzle with honey

Creamy mash with grilled chicken

One of my easiest meals after a long day at work!

Serves two

Ingredients for the mash:

  • four large potatoes
  • a pinch of coriander
  • 25g of grated cheddar cheese (you can use any of your choice)
  • 25g of butter
  • a pinch of salt

Ingredients for the spaghetti carrots:

  • two large carrots
  • a teaspoon of coconut oil (use any oil of your choice)

Method -mash

  1. peel potatoes and cut in four.
  2. boil for twenty minutes or until soft
  3. drain water, add butter, cheese and salt
  4. mix and mash thoroughly

Method – carrots

  1. peel carrots and cut into strings
  2. heat up oil for 30 secs and add carrots
  3. fry for 3 minutes

Plate the mash and spaghetti carrots, adding coriander to season.  Complement this dish with grilled chicken (see separate recipe for the meat)
